2-INGREDIENT SWEET POTATO SKILLET

Sweet potatoes are a staple in my kitchen, and since we eat them every week, I wanted to find a different prep for them aside from the classic baked or roasted option. This 2-ingredient sweet potato skillet has now become one of my FAVORITE ways to enjoy this superfood. I love making a big batch and serving it with fresh grilled fish and some salted corn on the cob. And while you only need 2 ingredients for mouth-watering flavor -- feel free to play around with add-ins like crushed pistachios, drizzle of raw honey or even toasted sesame seeds!

INGREDIENTS
2 medium-sized sweet potatoes
1/2 of a medium-sized yellow onion
1 tsp of fine sea salt
Olive oil
optional: 1/4 tsp dried thyme

DIRECTIONS
1. Pre-heat the oven to 425°F.
2. Peel the sweet potatoes and cut them into chunks.
3. Throw the chunks in a food processor and process until they are fully minced into little pieces.
4. Transfer the minced sweet potatoes to a bowl and GRATE the onion into the bowl using a microplane.
5. Add in the salt and thyme and/or whatever add-ins you desire. Mix everything together well.
6. Cover the bottom of an oven-safe skillet with a glug of olive oil.
7. Transfer the sweet potato mixture to the skillet, laying it out on the bottom in one even layer.
7. Put the skillet* in the oven and bake for about 30 minutes, stirring occasionally, until sweet potatoes have a nice golden color to them!

*Remember to use an oven mitt on the handle when dealing with the hot pan!
