Some things change, but the holiness of "lunch time" remains. From pizza Fridays in elementary school to buying your own cafeteria cookies in middle school ~ heck, I still remember the smell of the cleaning spray they would use in my kindergarten's lunch/assembly room. Then it was wandering out of the office to breathe in some fresh air as I journeyed toward that reliable salad spot on the corner in Beverly Hills or finding an NYC stoop to sit on while I ate from my packed Tupperware container. Now another iteration, and with a little more flexibility to my day, but working from home doesn't mean I want to lose the ritualistic nature of a good lunch break. So I've compiled a carousel of recipes to revive any monotonous mid-day meals that you can make (with little effort) at home that will keep your energy levels goin'.
CHICKEN BURRITO W/ COCONUT FLOUR TORTILLA
