HEALTHY APPLE CRUMBLE

VEGAN, REFINED SUGAR FREE


It's always nice to have something on the dessert table that's a little on the lighter side. I suppose you could always cut a smaller piece of pie. . . but portion control can be hard during the holidays. That's why I love an apple crumble ~ it feels indulgent, but the bulk of it is apples! Plus you don't have to deal with chillled pie crusts, flaky this or that, just a mouth-watering ooey gooey inside that makes this healthy apple crumble a perfect last-minute dessert. And as a bonus, the crumble can EASILY be adjusted to meet most dietary restrictions!

healthy apple crumble

INGREDIENTS for the CRUMBLE
1/2 cup of spelt flour
2 tbl of rolled oats
1/4 cup + 2 tbl of maple sugar
1/2 teaspoon of baking powder
1/4 teaspoon of fine sea salt
1/4 teaspoon of ground cinnamon
1/4 cup melted & cooled coconut oil
Opt: pinch of ground vanilla

for the FILLING
3 - 4 cups apples peeled, cored, and diced into 1-inch pieces*
1/2 cup of maple syrup
1/2 tablespoon of lemon juice
2 tablespoons of almond flour
1/4 teaspoon of fine sea salt
1/2 teaspoon of ground cinnamon
1/8 teaspoon of ground nutmeg

DIRECTIONS
  1. Preheat oven to 375°F.
  2. Combine dry ingredients for crumble then slowly add in melted (and cooled) coconut oil, using a fork to get that crumbly texture.
  3. Combine filling for apple mixture.
  4. Transfer apple mixture to (greased) dish or pan and thoroughly cover top with crumble mixture.
  5. Bake for 15 minutes at 375°F, then turn down the oven temp to 350°F and bake for an additional 25 minutes or until the top is golden brown.

*I like Granny Smith for this one.
