OVERNIGHT OATS ~ CINNAMON CEREAL EDITION

VEGAN, GLUTEN-FREE, REFINED SUGAR FREE


If you've ever had a small obsession with Cinnamon Toast Crunch like myself. . . this overnight cinnamon cereal will have you CARTWHEELING into your day. We take some simple granola, add in oat milk, and let the refrigerator + a little time work it's magic to create a creamy, texture-loving, morning oats that contain SO MUCH HAPPINESS in every spoonful you might also start doing back flips (if you know how to do those).

overnight oats
INGREDIENTS
Serves 2
1 1/4 cups of gluten-free rolled oats
1/2 tsp of cinnamon
1/4 tsp of fine sea salt
1 tsp of vanilla extract
1/2 tsp of almond extract
1/4 cup of maple syrup
2 tbl of olive oil
2 tbl of coconut flakes
1 cup of oat milk

DIRECTIONS
1. Preheat oven to 325°F
2. Combine ingredients for the granola in a bowl (EXCEPT for coconut flakes + oat milk)
3. Transfer granola mixture to a baking sheet lined with parchment paper and spread out in one even layer
4. Bake granola for 30 minutes, stirring occasionally by pulling the outside edges inward and moving the middle to the outside (outside crisps faster)
5. Let granola cool completely before transferring 1 cup to a mason jar
6. Add the coconut flakes to the mason jar and pour the oat milk on top, mixing well with a fork to ensure everything is fully covered
7. Let sit in the refrigerator overnight - ENJOY in the morning!
