EASY APPLE COMPOTE

If you're looking for a healthy, DIY natural sweet to brighten up your morning bowl of oats or slather on a piece of toast -- this is IT. Fresh apples, honey and dates melt together in a hot skillet to give you an effortless homemade jam in under 20 minutes (just add water)! And it's not just a breakfast treat. . . try sandwiching this jam between a pair of freshly-baked oat cookies :) Feel free to make a big batch and store it in the refrigerator for up to one week -- plenty of time to find creative ways to use this apple jam in your snacking!

INGREDIENTS
2 medium-sized apples (peeled, cored & chopped)*
1/2 cup of water
4 small pitted dates or 2-3 larger dates
1/2 tsp of ground cinnamon
2 tbl of raw honey
Sprinkle of Himalayan sea salt 
2 tbl of unsweetened coconut flakes, toasted**

DIRECTIONS
1. Peel the apples and cut into smaller chunks
2. Add the apple chunks to a skillet and pour water over them
3. Add the pitted dates, honey, ground cinnamon and salt to the skillet
4. Cover and let simmer over medium heat for 15 minutes, stirring occasionally
5. Remove the pan for the heat and let cool for about 5 minutes
6. Transfer the mixture to a bowl and mash until everything is well incorporated
7. Mix in the coconut flakes
8. Chill in the refrigerator for 2 hours - best served cold! It can be stored for up to 1 week

*Any apple variety of choice works here!
**Toast the coconut flakes yourself by adding 1/4 cup of unsweetened coconut flakes to a skillet and let toast on medium heat, stirring, for about 1 minute or until majority turn golden brown. You can store the extra or use it to sprinkle on your oatmeal!
