plantain chips

INGREDIENTS
2-3 Macho Plantain Bananas*
Olive oil
Salt + Pepper

DIRECTIONS
1. Pre-heat oven to 350°F
2. Cut each plantain length-wise, about 3-4 cuts, rotating the plantain as you cut. Make sure the cut is deep enough to penetrate the skin but try your best not to cut into the flesh
3. Cut the tip off the plantain and use your fingers (starting at the slits) to peel the skin back and off
4. Line a baking tray with parchment paper and spray some olive oil on it
5. Using a hand peeler, start at the top of the plantain (the flat side) and peel into chip-like shapes right on the baking tray
6. Arrange the chips in one even layer on the tray
7. Drizzle olive oil on top of them all and sprinkle salt + pepper
8. Bake at 350°F for about 15 minutes, feel free to rotate the tray half way through. Turn the oven temperature up to 400°F and bake for another 5 minutes or until all the chips have a golden color to them
9. Let cool and enjoy their crunch!
