HOMEMADE MARINARA SAUCE

VEGAN, GLUTEN-FREE, REFINED SUGAR FREE


Every great dish needs a good foundation and this simple marinara sauce is SO easy to make, yet tastes as if it's been slow-roasting for 24-hours... use it on anything from homemade pizza to fresh pasta to roasted veggies to everything in between! It stores in the refrigerator for up to two weeks (or in the freezer for 3 months) so go ahead and make a big batch.

INGREDIENTS
1 whole yellow onion
1 x 28 oz can of diced tomatoes
1 tsp of dried herbs of choice (or fresh, add more)
Salt + Pepper to taste
Olive oil

DIRECTIONS
1. Cover the bottom of a cast iron pot with olive oil and heat it over medium heat.
2. Chop up the onion and add it to the pot, turn the heat down to low and cover it. Let the onions sweat for 15-20 minutes.
3. Add in the can of tomatoes and stir, let it sit for 10 minutes.
4. Add in dried or fresh herbs and salt + pepper to taste.
5. Using an immersion blender (or regular blender), blend the sauce until it's smooth.
6. Let it sit for another 30 minutes or so on low heat!
