STRAWBERRIES N' CREAM RICE CRISPY TREATS

VEGAN, GLUTEN-FREE


Every birthday growing up, my kitchen would turn into the "rice crispy treat factory" where my mom and I would pump out batches of these ooey gooey treats to bring to my classmates. They really are the perfect celebratory sweet because you can customize them any way you please for every special occasion ~ from chocolate drizzle to rainbow sprinkles to dried fruit like we do here. This recipe is a little lighter than the buttery ones, but I promise you will not even notice a difference. We're keeping these vegan & gluten-free and adding in freeze-dried strawberries to elevate this tried and true classic!

rice crispy treats

INGREDIENTS
1 (10oz) package of vegan marshmallows
3 tbl of unrefined coconut oil
4 cups of organic brown rice crisps
About 1/4 cup of chopped freeze-dried strawberries
Opt: pinch of flaky sea salt
DIRECTIONS
1. Add the coconut oil to a pot over medium heat and then add in the marshmallows.
2. Let the marshmallows melt completely, mixing well throughout.
3. Turn the heat off and add in the rice crispies and freeze-dried strawberries as well as the flaky sea salt and mix well until the rice crispies are covered in marshmallow.
4. Transfer to a baking dish and flatten in one even layer. Let set for at least 3 hours before enjoying!
